MARCO POLO MANILA'S New Chef de Cuisine: Creating Perfection

Something has changed. Something new has come to MARCO POLO MANILA. A new Chef De Cuisine has arrived.
Once you enter CUCINA, there seems to be something different. A breathe of fresh air seems to engulf the place. Meet the new CHEF DE CUISINE, GIUSSEPE RIVOLI. A native of ITALY, Chef boasts of an incredible culinary career. He is very familiar with Asian flavors as he stayed in different parts of Asia. He has headed a number of kitchens and could definitely cook to perfection.
As such, a number of his signature dishes are on display in the buffet spread of CUCINA.
CUCINA is known for making great use of fresh products and being sure of the sustainability of the ingredients. Here, you are assured that everything is delicious and well cooked. Chef GIUSSEPE takes advantage of this in his dishes.
Showcasing his cooking skills, SIGNATURE dishes were brought out. Special mention would be the BEEF CHEEK. It was partnered with couscous and created this wonderful feeling in your mouth. Slow cooked and definitely from the heart. It's like how our parents would make it. The dish reminds you of homey experiences. Delicious.
Perfectly done, the OSSOBUCCO A La MILANESE with Yellow Polenta was another dish worthy of a second serving. The sauce created a flavor that sips into the meat. The polenta is the perfect bread to scoop the sauce of the ossobucco along with the bone marrow.

One thing that meat lovers would enjoy would be the PORK BELLY. Crispy skin and deadly meat. Sliced into huge bite sized pieces, you could go back for more.
To balance out the flavors, the BAKED SALTED FISH is something that you could have. The fish got the flavor of the sea and is soft from end to end.
The MAIN EVENT would be the ITALIAN PORCHETTA.
The pig was stuffed with more pork belly and a lot of spices. Making each bite flavorful and delicious. The skin was heavenly and the meat tender.

For drinks, you can't go wrong with MARCO POLO'S ICED TEA. Not too sweet and just right.
Congratulations to MARCO POLO ORTIGAS for having a new CHEF DE CUISINE. Great Job Chef GIUSSEPE.

HEY HANDSOME: THE MUST EAT AT PLACE for 2016

 By now you must have heard, I am indeed handsome. Fine, cute is a more apt term. At HEY HANDSOME, they really mean what they say and deliver. Serving PERANAKAN CUISINE, It has captured the hearts and the taste buds of the foodie scene in the metro.  Thus, making it the MUST EAT PLACE this year.
You may ask: " What is Peranakan Cuisine?". Before that night, I had no inclination that there was a word as such to describe food. Apparently, it has stemmed from the dishes served in Malaysia, Singaporean and Indonesia.
Currently, HEY HANDSOME can only serve dinner as the preparation and detail they give into each dish takes a lot of time. When one gets in a bit early, you get to see the magic happen. The kitchen is open and one of the most coveted area to stay at would be by it. You get to observe how they cook the dishes and see different techniques that could make you say, "why didn't I think of that?".

One of the people behind HEY HANDSOME is CHEF NICCO SANTOS. This guy is no stranger to delicious dishes. Being able to create YOUR LOCAL, you get to tell yourself, now I see. He loves his flavor and wants it to give you punches after punches. Never ending and different profiles all in a swift motion. A bite is all it takes and you are swept in.
For appetizers, they call them SMALL PLATES. These dishes aren't really tiny but the flavors pop up with each spoonful.  SOFT SOFT TOFU is bombarded with bonito flakes and has century eggs mixed in the fun. LAAP PHET is your minced duck with deep fried egg. When you mix everything in your mouth, everything bursts in one glorious fashion. Very very strong flavors one after another.

If there was only one starter to try, it must be the FRIED EGG SALAD. Ground sausage is mixed with crispy fried egg. One order is not enough as egg lovers would enjoy this tremendously.

The use of herbs and spices seems to be the main focal point to make the dishes come alive. One of the herbs would be GALANGAL. This BLUE GINGER is also called THAI GINGER. It doesn't tastes like it but once you get to try the dishes, you'll be thankful this was in the fray. Furthermore, Southeast Asian flavors takes us on a roller coaster ride. Up and down with a bit of left and right. Giving you a bit of surprise.

Right off the bat, the menu lists only a handful of main dishes. Each one with great profile and characteristic. For guests that would like something safe, the BEBEK PENYET or deep fried white pekin duck would work. A bit of nasi ulam or steamed rice with herbs, on the side and you are good to go.

Going a bit on the wild side, the BUAH KELUAK gives you a bit of sambal and danger. This dish uses the nuts from the PANGIUM EDULE or KEPAYANG TREE which is naturally poisonous. Thankfully, a process is done so as to remove the danger and to produce this delicious dish.
THE BEETROOT PANEER is a winner for both vegetarians and non vegetarians alike. Paneer is basically cheese that is wildly used in Indian cuisine. Some could mistake it for tofu because of the consistency and texture but this is definitely cheese. Here, it is mixed with beetroot and is given a dose of quinoa. Special mention must be given to the pappadum. The crunch is there and there's a sweet touch.
Giving you a bit of familiarity, the NASI LEMAK is for fish lovers as well. Seabass is used and partnered with pickled egg and brittle. The home made brittle gives it the crunch that you would look for. The seabass is cooked perfectly. The texture is there and so as the flavor.

Another crowd favorite would be the unassuming NAM TOK. This bbq beef shortribs is pretty safe to order. The beef ribs is partnered with som tam or pickled papaya. Sort of like our atchara but a bit different in a good way.
Dessert and drinks are also well thought of in HEY HANDSOME. The bar can create drinks to your heart's content. One would enjoy the KIWI with VODKA that has bitters and lemon. It doesn't taste like alcohol so it can be pretty fun as well. Maybe, the MALIC MILK might also be your fancy.

The YOGURT is something that you could have everyday. Partnered with black sesame and beetroot, it isn't too sour nor is it too sweet. Just something in the middle.

The KUEH LENGKUAS is different. Coconut meat is mixed with galangal cream to create a play on flavors.

For adventurous patrons, the CREAM PUFF is a must. The main ingredient is durian. You won't actually smell it but once you take a bite. It sinks in. At first is seems awful. A challenge to take in. After a couple of seconds, you get to enjoy that sweet feeling.



If there was one thing to consider, HEY HANDSOME offers only a number of dishes. The thing is, this works well because all of the dishes are exceptional. HEY HANDSOME is currently open for DINNER service only with two seating. One at 6pm and another at 8:30pm. Check out their instagram account to know when they will open for lunch.

Quick and easy. That is how I perceive YELLOW BOX RICE COMPANY.
This place serves a delightful array of dishes that is perfect for on the go students, family and friends alike.
Located on the 2nd floor in LA VISTA PETRON along Katipunan, the YELLOW BOX RICE COMPANY is a quaint place to have your on the go meals.
Cooked as you order, the meals are prepared and placed inside a cute YELLOW BOX. You have an option to get a regular or a big box. Believe me when I say that the regular one is definitely big enough.
Breakfast lovers would enjoy their TAPA and EGG. Made from a special secret recipe, the TAPA isn't overly sweet. The flavor is just in the middle and goes extremely well with rice and egg.
If you are trying to stay away from meat, guests might want to try their DAING NA BANGUS with SALTED RICE EGG and the TINAPA with ALIGUE RICE. The top is covered with a generous serving of crispy fish skin. You must eat it quickly so as to experience that crunch.
For a bit of veggies, one could go for the BINAGOONGAN RICE and the CHICKEN AND SQUID MONGOLIAN.
The BINAGOONGAN is served with sweet shrimp paste and a bunch of pork cutlet. The Squid and Chicken MONGOLIAN has that distinct taste that you would get from the squid. This can also be changed into a all vegetable option.
The SALPICAO is just genius.
Covered with garlic and mushrooms, the beef is tender and moist. Definitely a joy to eat. Alongside the next dish.
If there was one rice box to order, it would be the SISIG. Oily juices are mixed into the flavor. From onions, pepper, meat and a little bit of fat trimmings, definitely a nice mix with rice. This has a little bit of kick into it.
YELLOW BOX RICE COMPANY is the perfect place to visit for something simple and straight to the point. Here, you could get your meal in a few minutes and have a taste of your favorites in a box. 
PRO TIP: Get a regular sized sisig and salpicao. Mix them both together and it will bring you to heaven.

GRIND BISTRO in BGC'S NET PARK: Perfect place to take a breather

When the word GRIND comes into mind, it usually has to do something with pulling things apart by crushing it. At GRIND BISTRO in BGC, they like to play with the ingredients to make something different and enjoyable. Back to basics, I believe.
Located at the NET PARK in BGC, GRIND BISTRO is more than just a restaurant bar. It is a passion project that definitely shows the attitude of the team towards service and everything delicious.

Starting on a high note, the bar knows what it is doing. A plethora of drinks are personalized and concocted to satisfy the guests' alcohol needs. A perfect example, the KENTUCKY MULE is a bit different but hits the spot. Adding a pickled SILI or pepper, gives it a complimentary flavor. It may not be for all but it does give the drink a different tone.

SOUPS and SALADS seems to be an important part of the experience. Perfect for the rainy weather, one could go for the ASPARAGUS SOUP or TOMATO BISQUE. For something healthy and fresh, you could choose the LAGUNA FARMER'S SALAD. To be sure, you have to ask the server as locally sourced and seasonal ingredients are placed in the salad. As such, everything on it depends on what is available.



GRIND did an excellent job with the STARTERS. The POKE NACHOS made an iconic dish into something party friendly. By adding taro and sweet potato chip "nachos", diners get to play with their food and use the POKE as dip. Another simple yet delicious dish would be the POPCORN SHRIMP. Unagi sauce and wasabi aioli was mixed to make the shrimp decadent and savory at the same time. It gives off a bit of crunch with each bite.

 For something "light", one could go for the CORNED BEEF on RYE. Almost similar to a REUBEN sans the sauerkraut, the bread and the emmental cheese works well with the secret sauce. The bread was well buttered and the meat was cured in house.
At GRIND BISTRO, they take meat seriously. Everything is fresh and made in house. From the bread to the patty, you can't go wrong with any order.

As such, their GRIND BURGER is made with 100% USDA BEEF. The Brioche is fresh from the oven and is smothered with Tiny's secret sauce.
For mains, healthy eaters could start off with SALMON FILLET. Soy, miso, ginger, and lemon syrup makes up the glaze. These make the flavors pop up.


If there was one dish that I would go back for, it would be the NUTTY BLACK CHICKEN. Black tempura chicken fillet is partnered with coleslaw and a sweet chili sauce. Hazelnut romesco was also used to create the flavor. The meat was tremendously moist and the batter goes extremely well with the chicken.

GRIND definitely read everyone's mind as you could actually create your own steak. You can pick from a number of cuts, sauce, toppings, and sides. One thing is for sure, the meat was cooked to perfection. Each knife slice shows the tenderness of the steak. Delicious.
Dessert is deadly as it can be, they have this amazing SMORES that was just insane. A marshmallow is toasted while vanilla ice cream is inside of it. A number of chocolate covered potato chips are placed on the side then hot cocoa slowly covers the entire cauldron. Deadly good but a bit too sweet for some.
GRIND BISTRO seems to be another welcomed treat for BGC goers. Aside from offering worthwhile cocktails, dishes are well thought off. Definitely a must visit for a night out with friends. Budget around 800-1000Php per person. Better to come as a group. It's better to share.

HAI KANG SEAFOOD RESTAURANT: Greenhill's Old School Favorite

New Chinese Restaurants have been popping up left and right as of late. Even if this is the case, there is something alluring with an old classic. At HAI KANG SEAFOOD RESTAURANT, you are treated to delicious classic Chinese dishes.
HAI KANG is located along Wilson St., in Greenhills. Parking might be a problem but do not let this hinder you as the cuisine they serve are delightful and worth the visit. Dishes are also served in different sizes. Hence, you are able to choose the amount of food depending on the number of guests that you have with you.
For starters, guests might want to try out the SEAFOOD PUMPKIN SOUP. Something warm to prepare the appetite, the soup has a curry flavor mixed into it. Different types of seafood are also present.
It is amazing how a simple ingredient could be transformed into a dish with a lot of flavor and texture. Take for example, chicken. Here, it could be a cold cut surrounded by deep fried wanton wrapper and some mangoes and century egg. Producing a crunchy dish perfect for the kids. On the other hand, it could cooked and mixed with SOY to produce a moist and tender product.
Being named as a SEAFOOD RESTAURANT, HAI KANG knows its a b c 's of the sea.
ABALONE is served with mushrooms that make it as savory and decadent as ever. SCALLOPS are baked with different herbs and spices to make it enticing to the patrons.
Huge prawns are cooked in Laksa sauce to deliver an interesting twist. Partner it with the mantou to scoop up the juices.
Fresh GAROUPA will be picked from an aquarium and cooked in the simplest of ways. This is to bring the flavor out from the fish rather than covering it. Each bite is smooth and heavenly.
HUGE CRABS are also available at HAI KANG. Different suggestions are given as to how and what way to cook them. Some would prefer that it be breaded and cooked with just pepper and other spices.
Since HAI KANG is a Chinese Restaurant, the mandatory must order dish would be the PEKING DUCK.
Beautifully presented and cooked, this duck is a form of art. The skin was light yet crispy. Having it wrapped in pancake with a dab of hoisin sauce gives it a deadly yet scrumptious blow.
After cutting and presenting the meat, the rest are cooked in another way. Deep fried and with lots of pepper, garlic and other spices. Perfect to go with rice.
Speaking off rice, when at a Chinese Restaurant, Filipinos tend to order one thing. The Sweet and Sour Pork.
Their version has the right amount of meat and seasoning. A bit on the sweet side, this would go perfect with any type of rice. The Perfect Match.
HAI KANG lives up to its name. Seafood dishes are straight forward and definitely delivers. The quality and quantity of the dishes are proportional with the amount of money you pay. The only hard part is parking but that is easily remedied by going here early or being able to have someone drop you off. Definitely a must revisit.

CELEBRATING DUSIT THANI'S THE PANTRY 1st Year.

Have you ever seen how a LECHON or roasted pig is cooked? At DUSIT THANI'S THE PANTRY, they anticipate the needs and the wants of the guests. As such, they make sure that they cook, cook, and cook everything in house to make it fresh, delicious and spot on.
Just a few days ago, DUSIT THANI'S in house restaurant THE PANTRY, celebrated it's first year anniversary. Festive mood was in the air, as balloons, tuk tuk and even unlimited drinks were served during the party.
  To make the day more special, a performance by the bossa nova singer, SITTI NAVARRO, was done on the staircase. This definitely made the dining experience special.
 Still, it is the food that lured people in. To start off, one could go for the cold cuts, salads and appetizers. Different cuts of meat complimented the freshly baked bread. Aside from this, THE PANTRY had a make your own pasta section that was just beside the fresh seafood area. The most pound for pound spread though would have to be the carving station.
Huge portions of baby back ribs, crispy knuckles, and everyone's favorite, LECHON were served to the dining public. The roasted pig was taken right off the bat. Each chop would reveal smoke coming out from the insides. It was visually and olfactory stimulating.
They even had a huge roasted lamb to give more choices to the guests. Although some may say that lamb has a bit of gamey taste, it was tender flavorful. Just beside this would be their halal kitchen. As such, our brothers and sisters would be able to enjoy the feast as well.
The best part of it all would be the STEAK. Right smack at the middle is a simple table with a huge tomahawk cut.
Bloody red and tender, this one was definitely a must get for all the meat lovers. Each bite could produce a moan like no other. The meat was tender and the juices were retained perfectly. Don't worry though, as your preferred degree of doneness could also be achieved.

Dessert was very well done. A lot of sweet treats were served and presented. From Churros to cakes and ice cream made in house, guests could also go for local delicacies.

If one plate would sum it all up, DUSIT THANI'S The Pantry went all out for their 1st year anniversary. Different carving stations, seafood, cuts of meat were served to the public to enjoy this one of a kind celebration.

DENNY'S OPENS TOMORROW in BGC!

 And another one enters the Metro Manila dining scene. Starting OCTOBER 7, 2016 FRIDAY at 6 am DENNY'S would be open to the dining public. Closing time? None whatsoever. For it is open 24/7.
For quite some time, people in the industry have been talking about this particular diner opening up in the metro. After a few years, a sign of life emerged when a restaurant space was covered with tarpaulins that had the DENNY'S LOGO!
Thankfully, DENNY'S in BGC is now open. Located in BGC UPTOWN PARADE and right beside the Palace Pool Club, DENNY'S is the perfect after party place to sober up. Being a family friendly diner too, DENNY'S serves not only breakfast items but also Filipino favorites and some late night snacks.
Breakfast lovers would enjoy their PANCAKES. One of them would be this CREAM CHEESE CINNAMON that was served with salty bacon and egg. The pancake was soft and had a sweet touch. It went well with the bacon because of the contrasting flavors.
 For something a little bit more "light", the GRAND SLAMWICH would do perfectly. Scrambled eggs, bacon ham and a potato bread grilled with maple spice syrup. This particular bread is an amazing touch. One could definitely devour it even without sides.
 It could be noted though that some of the dishes were modified to suit the Filipino palette. A couple of dishes that were somewhat different would be the SKILLET WRAP and the SAUSAGE and PEPPER SKILLET. The skillet wrap has seasoned nacho meat inside and is covered with a sunny side egg. A combination of sausages makes up the other one. To make it a bit different, a mix of BEDDAR, CHEDDAR and English Bangers were used.  Afterwards, gravy was poured all over.
Describing it "a bit hot" would be an understatement, the SRIRACHA BURGER is named appropriately. This one right here can make your mouth flare up. Seasoned with sriracha and accompanied by pickled jalapenos, the burger is a must try.
Surprisingly, the prices of the dishes are quite affordable compared to other restaurants that are serving the same thing. Taste wise, it was a welcome treat. The dishes could definitely make your day.

DISCOVERY PRIMEA'S TAPENADE: A Journey of New Dishes

If there was one part of a meal that everyone likes to have, it would be dessert. Sweet endings is the why we eat. At DISCOVERY PRIMEA'S TAPENADE, it seems they want you to have a journey. As their guest, you would appreciate the experience because it is worth it. Going through the starters, the mains and finally, the dessert would make one appreciate everything.

 It starts with the talk. The stories and the rumors that your friends and loved ones told you about TAPENADE is true. They are tremendously right. DISCOVERY PRIMEA has transformed TAPENADE into a dining destination like no other. Simple, sweet and straight to the point. They created the "SALAD ROOM" that serves more than just green leafy vegetables. Aside from fresh produce and prepared concoctions, they also have different kinds of cheese, bread, seafood, and even meat. Yes with just this you would have called it a day but TAPENADE is not yet done with you. They want you to be full and jolly so they created new dishes that would entice you to go back for more. And here, your sense of sight, smell and taste works overtime as the flavors keeps on rushing you.
To whet the appetite, TAPENADE would suggest that you try the SETAS CON JAMON and the CHISTORRA FRITA. The smoked prosciutto is served with different mushrooms and herbs to give it a light yet salty flavor. The CHISTORRA FRITA, on the other hand, is a bit stronger in terms of taste. One bite and you realize that these Spanish sausages are salty and goes well with the grilled homemade ciabatta.
If in case you and your dining companions are a bit old fashioned, the FRITTO MISTO and the CHICKEN WINGS "ALLA DIAVOLA" are both must try. The wings are covered with different spices to give you an intense experience. Partnered with the mint yogurt, the chicken is tamed. The squid, shrimp and the snapper of the FRITTO MISTO were fried perfectly. The batter used made sure that the natural flavor of the seafood is brought out. Delicious.
When the next dish was placed on the table, there comes a realization that the everything compliments the SALAD ROOM. Greeted with a huge plate of CRAB MEAT LASAGNA, any bad day could be turned into something great. This is comfort food personafied. One scoop and you could see the creamy crab bisque and the light bechamel sauce playing with each other. Although it might be a bit heavy if you consume this all on your own, you won't regret getting this.
I do not know if it was the freshness of the ingredients or the way the pasta was cooked but the PIMENTON LINGUINE was light, properly seasoned and a joy to eat. PIMENTON is the Spanish word for paprika. There is a tendency for some dishes to be over seasoned. Here, it was not the case as the herbs and spices went well with the Spanish chorizo, bell peppers and the home made pasta.
Another pasta dish that was incredibly good would be the GOAT CHEESE and SCALLION RAVIOLI. Even if the fillings included double smoked bacon, the saltiness of the dish was on point. One would expect that it might have gone overboard with the tapenade because of the anchovies and capers. Rather, the flavors were harmonious.
Pizza is a strong suit for TAPENADE. A mixture of different types of dough to make the perfect crust is a trademark of TAPENADE. Not too chewy nor too crisp, the texture is right there in the middle.
The VONGOLE ALL'OREGANATA is something unique as clams were used alongside different herbs to give it a different seafood feel. The TRUFFLE & SAGE was a welcomed surprise. When truffle is mentioned, other restaurants would be drowning their dishes with it. Here, the proper balance was sought out. Nothing was being covered up. A crowd favorite, the PIZZANTE DOLCE or the sweet and spicy pizza would give you a treat. Spicy salami was partnered withe provolone cheese and honey. Making contrasting flavors work hand in hand.
The skill of CHEF LUIS was masterfully demonstrated with the new mains. The SEAFOOD ARROZA CALDOSO is a brothy Spanish rice. Snapper, shrimps and clams were added to the saffron-shellfish essence.

Definitely for sharing, the WHOLE ROASTED FREE-RANGE CHICKEN and the US BABY BACK RIBS would be the toast of any dinner. The chicken is marinated delightfully and cooked with mushrooms, asparagus, carrots and lemon-thyme jus. The meat is moist as it should be, while the skin absorbed all the flavors as well. Meat lovers would rejoice with the BABY BACK RIBS. A sweet and spicy calabrian glaze was used to give it a different type of rib flavor. The meat was fall off the bones. That tender. The grilled corn and scallion risotto gave a sweet touch to this spice filled dish.
And the main goal of the meal, thus arrived. The dessert. New sweet dishes were brought out that  give patrons more choices to pick from.
Aside from the amazing CANNOLI, the BUTTERSCHOTCH BUDINO was the crowd favorite. A salted caramel pudding was covered with light whipped cream. For cake lovers, TAPENADE has the ORANGE and ALMOND CAKE. Moist and screaming with chocolate glaze, the pistachio cream accompanies the vanilla gelato. Chocolate would be proud with the BITTERSWEET TARTUFO. It had olive oil gelato and cripy bread chips to give it a bit of swirl in terms of flavor and texture.
It was a journey worth doing over and over again. Everything came together. The ambiance, the service and more importantly, the food. The new dishes would definitely compliment the old and of course the famous salad room.

49B HEIRLOOM KITCHEN REBORN: LEONARDO'S LECHON X PEDRO BREW X BACON

A few days back, a gathering of food focused individuals happened at the new 49B HEIRLOOM KITCHEN. Here, food was the center of the show. Cousins came together to showcase their delicious ideas.
Located along Scout Gandia, 49B HEIRLOOM KITCHEN can now serve a lot of diners all at the same time. With enclosed spaces, private meetings and functions could be done here.
Once seated, Nards of LEONARDO'S LECHON showcased one of his newest ideas. Chicharon with different flavors. The SALTED EGG is somewhat on the sweet side. A little tame for me but would work wonders on top of rice. The tamarind and salt, on the other hand, is straight to the point. The Tamarind is imported from Bangkok making it a bit more shocking to the senses compared to our local version. It really wakes you up with each bite.
Another cousin created the CURE ARTISAN BACON. The bacon are all made with love and respect. Flavors would include the original, honey maple and spicy honey maple. Believe it or not, having the bacon on top of a quesadilla brings childhood memories back to life. The honey maple isn't too sweet and is just right. Trying out the spicy version makes your tongue go wild with the spices. Don't worry though, it isn't too hot.
The main event would have to be LEONARDO'S DRUNKEN LECHON.
This baby was drenched with PEDRO BREW. Marinated perfectly, the skin and the meat inside carried a spice filled flavor.
The meat was moist and soft. The skin was crunchy good. It actually didn't need any dips or whatever because it was that delightful.
Chef Erica of HEIRLOOM KITCHEN brought out new dishes that went well with this Filipino themed lunch.
This POTLUCK PANCIT is covered with floss and everything you could think off. According to her, this was actually what they used to bring during school lunches and affairs. Her mother would cook and use all the ingredients she could find to make a delicious pancit.
Technically, you could say that this FERN SALAD is healthy but adding some crunchy bits on top just made it even more delicious. The vinaigrette was sweet and had some sour components in it. This made it work well with the greens, tomatoes and the salted egg on the side.
When this weird looking healthy dish was placed on the table, people tend to overlook it. Apparently one bite in and it should not be the case. The WINGED BEANS or Sigarilyas was cooked in coconut milk to give it a bit of sweetness. This dish was perfectly executed. Delicious.
A visit to 49B HEIRLOOM KITCHEN would not be complete without the cookies. These cookies could make all your sorrows go away. One bite in and you'll understand why.

This collaboration between Heirloom Kitchen, Leonardo's Lechon, The Cure, and PEDRO BREWS gave Filipino Cuisine a pat in the back for doing a job well done.

CITY OF DREAMS' CHAOS: Drinks Galore Because it's OKTOBERFEST

 It's that time of the year again when you see traffic getting worst and people starting to think about Christmas. But before anything else, it's OKTOBERFEST. Another reason to celebrate, be merry and get together with friends and loved ones.
 At CITY OF DREAMS, they opted to celebrate OKTOBERFEST at CHAOS NIGHT CLUB. From October 7-16 at 7pm to 11pm, guests are treated like royalty with all the delicious German fare prepared for them. Aside from that, entertainment is provided by local bands and also a couple of drinking games and raffle await diners.
 As you enter the night club, you can't help but wonder the grandiose fixtures and the huge entrance. It seems you are transported away from the metro into something more relaxed, different and yet fun.
As you are assisted to your seats, you pass by an array of stations which serves different dishes that would definitely whet your appetite.
 Since this is OKTOBERFEST, a long list of imported and local beers are free flowing and part of the buffet. Different craft beers to Ales and drafts are served to the guests.
 A line of dishes like spatzle, red cabbage strew, bread dumplings and roasted potatoes with onions are prepared for the feast that awaits everyone.
 It's meat overload. GRILL HAXE or roasted pork knuckles is accompanied by roasted farm chicken and a traditional Munich style roasted suckling pig.
 You are able to distinguish the smooth flavor of the roasted pig and the sauce makes a difference.
  Aside from the meatloaf, one must not skip the bacon.
 This BACON is not your ordinary fare. It is well cured and seasoned to perfection. It has a bit of sweetness in it and is delicate. You would definitely enjoy this with a cup of steaming hot rice and some eggs.
Since this is OKTOBERFEST, a good number of SAUSAGES were brought in and presented to the crowd.
Bratwurst, Weisswurst, Nurnberger, Knacker Bockwurst, Thuringer, Wiener Wurstchen, and a lot more were prepared. It's quite a thrill to taste different types of sausages that gives you a number of flavors and texture. Accompanied by sauerkraut and different mustards, you will definitely have a great time savoring each bite.
 German desserts were also on display. The BAVARIAN APFELSTRUDEL is the crowd favorite. This had vanilla sauce, rote grutze and creme chantilly. Rice pudding, ginger bread, cakes and toffee apples were also there for the taking.
Included in the buffet are different cold cuts, salads and a number of bread selection perfect to go with any of the dishes. Overall, one would definitely have an amazing time drinking and eating the night away at CHAOS' OKTOBERFEST CELEBRATION.

ATELIER VIVANDA in BGC: More Than Just Steaks.

 Imagine a huge slab of meat greeting you as you enter a restaurant. One of the first thing that you look at when you enter a restaurant is the menu. At ATELIER VIVANDA, theirs is a simple and straight forward. They bring out an uncooked piece of meat to make you salivate and order everything on sight.
Located in Forbes Town Center near Burgos Circle, ATELIER welcomes you with warmth and an amazing ambiance. A circular staircase leads you to the second floor where a private room is also located.
 
Atelelier Vivanda does pretty well in the starters section. For soup, the pumpkin and the cauliflower are excellent choices. Not too creamy and has texture.
Two must order dishes would have to be the TRUFFLE FRIES and the MUSSELS. In true French fashion, the mussels were cooked in white wine, herbs and garlic. Partner it with bread and you have a great dipping experience. More so when you do it with the Fries. Cheesy but not too much, the Fries are excellent finger foods while waiting for the other dishes.
Mains are the star of the show but side dishes are the supporting cast.
Guests could opt for a sampler of three different accompaniments. The staff suggests sauteed potatoes, pommes darphin and pommes dauphines. The Pommes Dauphines are crowd favorites. These crisp potato puffs are a joy to eat. The darphin is like a hashbrown. Strands of potatoes are mashed together and deep fried. If there was one side to pick, it must be the GRATIN. The layer upon layer of potatoes are nicely stacked together with a bit of cream. It makes everything delicious.
Surprisingly, ATELIER VIVANDA has a plethora of main courses. They offer duck, seafood and even LAMB. The grilled lamb is simple. Cooked with a bit of oil, there was a hint of gamey flavor in it. The kitchen must have wanted to bring out the natural flavors of the meat.
The HOLSTEIN BEEF RIB would be your top choice. Steak is steak, as one friend would say. This was served huge and juicy. There was a bit of drippings still coming out. Once it was placed on the table, patrons would smell the richness of this dish. This is definitely for sharing.
Admittedly, the price point is a bit on the high side. This is expected as steak is not an everyday meal. The service was attentive and on point. It was also good to note that they started serving lunch meal sets to entice the public to give them a visit not just on special occasions.

TRA VINH: Vietnamese Dishes in Quezon City

There seems to be a perception that VIETNAMESE CUISINE is healthy and a bit bland. At TRA VINH, they try to change that misconception. Serving delicious and fresh dishes, TRA VINH is surprisingly good.
Located in the BANAWE AREA in Quezon City, this seems to be the only legit Vietnamese Restaurant in the district. The concept originally came from a Vietnamese Partner currently residing in Australia. There a number of TRA VINH restaurants are open. Authentic as can be, most of the secret ingredients are flown in. Meanwhile, the meat and vegetables are bought daily in the morning from the market to ensure the freshest ingredients are used.
Starting the meal with the some of the small plates could be your undoing. Remember this is a Vietnamese restaurant. You came here for the soup! Although, a compelling reason to visit this place is also that they serve other non soup dishes that are delicious and affordable. Better yet, just try out everything. Having a lot of choices from the menu gives the diners perspective on how Vietnamese cuisine is not just about banh mi and soup.
You could go for the Fresh Spring Roll. This is made only upon order.  The deep fried stuffed chicken is plumped up by the added meat. The home made shrimp wrap encloses a sugarcane to give it a sweet natural flavor. The Pomelo Salad is a standout as the crunchy crackers gives it a different texture profile.
Two dishes that are almost the same but different are the SALT and PEPPER PRAWN and FISH.
One might think that TRA VINH uses the same ingredients to marinate and produce both products. Thankfully, they don't.
Thus, the flavor between the two differ. The PRAWN has a more bold and peppery taste. The Fish, on the other hand, has a salty flavor that is absorbed by the meat.
A SPECIALTY of this restaurant would be the VIETNAMESE PANCAKE.
Accompanied by an assortment of vegetables, you get to create your own wrap. Use the different green leafy vegetables as a vehicle for your pancake. Place a bit of sauce inside and take a bite. It gives a fulfilling experience.
For the main dish, the noodles are your best bet. You get to pick between soup based and dry ones.
Admittedly, the one with soup has a more authentic flavor and feel. Although, the dry noodles aren't that bad at all. Accompanied by freshly cooked spring rolls and pork barbecue, you won't go wrong with this. When ordering for a Pho, ask the staff based on your preferred flavor and maybe they could make it happen. Also, one might notice the different sizes of each bowl. Don't be overwhelmed, you could definitely finish it.
A surprise crowd favorite would be the Fish Stew. This is almost like your normal "sinigang" but it has a bit of sweet tone to it. Contrasting flavors of the herbs and spices makes this dish a must try.
The dishes are generally on the sweet side. This might be because of the side sauces served. For the price point, you can be assured of its competitiveness. Thus making TRA VINH worthy of a visit when in the area.

POP TALK GUESTING: It's a Burger Kind of Day After All.

 You guessed it right. This guy is going to be on National Tv again. For the second time in around a year, Mr. Food In The Bag, aka me, will be on the Lifestyle Tv Show POPTALK.
Airing on OCTOBER 22, 2016 Saturday at 8pm on GMA NEWS TV (Channel 11), Kuya Tonipet, a celebrity, a random guest reviewer, and I would be checking out burger places in the metro.
 Aside from burgers, we get to taste different dishes from these three restaurants.
 Of course, you have to tune in to find out what happened to me during the show.

To unwind is divine. To enjoy great food with wine is even better. That is what FAIRMONT'S newest offering is all about. At the FAIRMONT LOUNGE, a welcome treat is prepared for guests and patrons. The TAPAS Y VINOS.
An amazing spread of tapas and other dishes were brought out by the kitchen to impress the diners.
Different cuts of meat, cheese and even cocktail snacks were laid out.
Prosciutto with quail eggs and blood sausages are but a couple of example of the tapas that THE LOUNGE at FAIRMONT SERVES. You realize the quality and the effort to create these dishes with each try. The bread is freshly made in house and is still crunchy. The ingredients are hand picked to give you that amazing eating experience.

After a bite or so, go for the freshly made ceviche and the tomato gazpacho. These will definitely shake your taste buds and wake them up.
A few deep fried items were also on the buffet spread. Special mention must be given to the fried calamares. These aren't those run off the mill versions. Rather, each bite would make you swoon with delight. The coating is perfection and there is no rubbery texture to greet you. It is just amazing. Accompanying this dish would be equally delicious croquettes.
Not to be missed, the classic paella is served on top of a huge pan. The flavor is spot on. Partner this with the fabada or the ox tongue and you'll ask for more.
This buffet comes with an endless supply of Spanish Red and White wine too. Making the promotion a no brainer for wine drinkers and food lovers.
With all that is said and done, visiting FAIRMONT MAKATI for their Tapas and Wine would surely make your night sweet and delightful.

FAIRMONT MAKATI STAYCATION: A Wonderful Treat

Luxury might be a state of mind for some but at FAIRMONT MAKATI, it is their business. Strategically located in Makati's Central Business District, Fairmont is one of the best hotel brands in the Philippines.
Check in is fast and seamless. The person that greets you at the front desk assists you with everything and even gives you a little tour of the room you are assigned with.
State of the art entertainment system is present in your home away from home. A flat screen tv greets you with all the cable channels that you would want. Fast and secure wireless internet is also an amenity they offer.
The mini bar at FAIRMONT has one of the most complete set one could get in a hotel in MANILA. A number of alcoholic and non alcoholic drinks accompany the different snacks that they offer.
The washroom has a separate shower and tub. Perfect for someone that wants to relax after a long and tiring day. The toilet has a bidet and for some that really matters.
The toiletries are branded and is of the highest quality. None of that generic hotel shampoo. At FAIRMONT, they use the LE LABO brand.
For foodies, an early lunch would be perfect at the in house buffet restaurant, SPECTRUM. Here, they bring out the best culinary experience one can get.
Special mention would have to go for their carving station. Aside from the steak, they also have a crunchy porchetta waiting for you to devour.
Furthermore SPECTRUM offers spicy Indian dishes. Freshest ingredients were used to create plates upon plates of awesomeness. Some are even simple and straightforward but delicious none the less.
After all the food, rest and relaxation is an important part of luxury. At FAIRMONT MAKATI, you can treat yourself to an amazing spa experience.
A pool is also there to let you enjoy a bit of fun under the sun. Happy hour is perfectly spent here while watching the sun go down.
In room dining service is available all throughout your stay.
 They provided a menu for you to pick dishes from. Something light and healthy to a devilish and mouth watery good dish. FAIRMONT MAKATI has it all for you.
To balance everything out, they have an outstanding gym. Located on the same floor as the spa and pool, it has the best equipment that could attend to the different needs of the guests.
A turn down service is provided to prepare the room and the bed for the night's sleep. Aside from the fluffy bed, the side table has a socket for charging and an electronic panel that takes care of all the lights and even alarms. For late night drinkers, one could enjoy the TAPAS and WINE at FAIRMONT'S Lobby Lounge.
BREAKFAST AT SPECTRUM is another treat.
Loads of breakfast goodies like bacon, cereals, eggs and pastries await the guests.
 Surprisingly, there was even taho and champorado with tuyo to give the patrons a taste of mornings in Manila.

FOOD CREW PH GOES LOCAL: A CEBU FOODIE ADVENTURE

Just last week a group of food filled minds went on over to CEBU and visited iconic restaurants that are well known and loved in the city down south. This is FOOD CREW PH GOES LOCAL.
Flights were care of CEBU PACIFIC. Hesitation was in my mind as it was the first time I had tried CEBU PACIFIC in years. Surprisingly, the flight was smooth and left on time. The flights were delayed at most 10-15minutes. Not bad if you ask me.
Accommodations were handled by ALBA UNO HOTEL. This hotel is located in the Cebu IT PARK making it within walking distance of different restaurants and offices. Transportation around the city was taken cared of by UBER. Honestly, I didn't know that UBER was already present in CEBU. Here, they operated proficiently and courteously. If in case you're a first time user like me, INPUT the promo code FOODINTHEBAG . This will give you PHP 200 off on your first two rides. Sweet!
After settling down, the first stop was CHOOBI CHOOBI. This restaurant has made a name out of itself as it uses fresh seafood to entice its patrons. Aside from being a heavy hitter in CEBU, they also have MANILA BRANCHES.
For a sweet delight, we head on over to TABLEA CHOCOLATE CAFE. Different sweet endings were presented with TABLEA as the center of the show.
For DINNER, ISLA SUGBO SEAFOOD CITY was the main attraction. Here, it was unlimited paluto or freshly cooked dishes buffet style. Just beside it, our second dinner was presented by TSAY CHENG. A Chinese Fine Dining restaurant that specializes with dimsum, patrons would be able to sit back and relax and enjoy everything.
The following day, breakfast was held over at HARBOUR CITY DIMSUM. Known for their steamed fried rice, this is every CEBUANOS idea of quick and delicious Chinese Food.
Just to prepare our tummies, snacks and caffeine were provided by TOM N TOMS COFFEE. A South Korean Franchise, this is CEBU'S version of a quick coffee getaway.
Dinner for the second night was held at HOUSE OF LECHON. Delicious mind blowing roasted pig were served alongside different dishes.
On the last day, an amazing FILIPINO lunch was prepared at ABASERIA. The ambiance is just amazing as this Bed and Breakfast place delivers a simple Cebuano Twist to Filipino Food.
As a treat, BOCAS had different pastries and sweet endings for everyone. Opened just a few months ago, it has created a following for incredible mouth watering desserts.

In the next few days, FOOD IN THE BAG would be featuring different restaurants that could make your next CEBU visit worth it.

CHOOBI CHOOBI: Cebu's Favorite Hangout

CHOOBI CHOOBI is a known seafood and Cebuano restaurant chain in CEBU. Having a lot of restaurants, CHOOBI CHOOBI offers delicious dishes and is worthy of a visit.
With its bright colors and red hues, CHOOBI CHOOBI has distinguished itself as a brand name in the VISAYAS REGION. Local sourcing of fresh ingredients and seafood makes this restaurant a force to be reckon with.
Starting off strong, The POMPANO was served. This huge fish could actually be cooked in a number of ways. It could be grilled, pinaksiw, or in this case, steamed in soy sauce. The freshness pops out with each bite.

Having a shrimp farm helps CHOOBI CHOOBI with its supply chain. AS such, different types of dishes were served using shrimps and other seafood delicacies. One of them would have to be the BLACK PEPPER SHRIMP. This deep fried crunchy shrimp dish has a bit of sweetness in the sauce that counter balances the peppery taste.

Aside from SHRIMPS, Choobi Choobi is pretty big with mussels and crabs. One particular way of cooking would be having them steamed in bags filled with flavor. Diners could pick between: butter and garlic, spicy gata, steamed or their signature "Choobang".
More than just seafood, CHOOBI CHOOBI also offers NATIVE CHICKEN. These are your farm raised traditional chicken. One could opt for the TINOLANG MANOK BISDAK. Something to warm up your stomachs. Lemongrass and malungay are used to flavor up the dish. Another delicious way that they serve the native chicken would have to be the LECHON MANOK BISAYA. This right here is something familiar but has a very distinct fresh flavor in it.
A crowd favorite would have to be the CHOOBI PATA. Choobi Choobi's version of CRISPY PATA. This huge crunchy knuckle has crispy skin and has tender meat inside. Definitely a dish perfect for a hot bowl of rice.

A visit to CEBU CITY brought out a few revelations. One of them is that Cebuano seems to be big on buffets. Since CEBU has access to fresh seafood, they like theirs cooked on the spot.
At ISLA SUGBU SEAFOOD CITY, this is what they do. Located in The Grand Convention Center, ISLA SUGBU SEAFOOD CITY makes quite an impression. The place is perfect for a quick family get together and even bigger occasions like birthdays and parties. They have an awesome spread that houses different live seafood, fresh meat and vegetables ready to be cooked based on your preference.
At a long table, freshly cut tuna heads greet the guests.
Just caught a few hours ago, other fishes were placed on ice. On the other end of the table, live crabs can be seen moving around.
The highlight of any visit though would have to be the live fresh lobsters on display. These babies are huge and are perfect for that grill.
Of course, pork barbecue and other traditional Filipino favorites are also on display ready for you to order and devour.
To start off, one could go for something healthy. Fresh vegetables stir fried in soy sauce could be your bet. A bit on the sweet side but each bite is crunchy and could help your coping mechanism for failing your diet.
Surprisingly, there are other dishes available that aren't on the long fresh buffet table. One of them would be these succulent oysters. You could have them fresh, baked or whichever way you want to eat them.
The LIEMPO is coated with a sweet blend of soy, sugar, and other spices that is very Filipino. The flavor is traditional and is a definite hit among the kids.
A crowd favorite would be these deep fried fish. Savory yet sweet, one bite in and you understand why freshness is an important part of flavor. Having been alive a few minutes ago, the guests get to experience the best flavor one could get from the dish. The coating is crunchy and the sauce gives it a bit of sweet and sour touch.
The main event would have to be the SLIPPER LOBSTERS. People with allergies might feel a bit jealous but the lobsters were placed on the table, you would see the anticipation in the air. One bite and then another. A generous seasoning of pepper and salt brought out the natural flavors of the lobster. Delicious.

SIAM THAI: A Thai Hotpot Sports Bar in Kapitolyo

One wouldn't expect to find a hotpot place in the middle of Kapitolyo more so if it's Thai themed. SIAM THAI is the exception. It is a Sports Bar, Hot Pot, BBQ place rolled into one.
Located in the PIONEER CENTER SUPERMART, SIAM THAI has a couple of floors just for their patrons. Granted that the first floor can only accommodate a table or two, the second is where all the action happens. Once you get there, you are greeted by the friendly staff and is escorted to your table. You might want to be seated at the alfresco section since it will remind you of a garden setup. It is filled with HDTV playing different sports channels. Hence, it is perfectly fine to get an ice cold bucket of beer to go with your meal. The fact that they have an impressive line up of alcohol makes the distinction that it is indeed a sports bar. If one can't get over the humidity, they also have an air conditioned room to set you up into full foodie mode. 
The restaurant prides itself in offering THAI BBQ HOTPOT. A bronze shabu shabu pot with bbq space is brought to your table as you order a set or get an unlimited version. Priced at only 599Php, the "buffet" version is a wonderful way to get the most out of the meal as you can refill and ask for fresh ingredients to cook.
First timers need not worry as the staff will help you create wonderful dishes to the best of their ability.

Admittedly, you might wonder why the soup doesn't taste as much as you would like. Apparently, there is a trick to this. Since you will be bbqing the meat, all the juices and extra flavor would drip down to the soup. Wait a little and you will be able to taste different flavors based on what you cooked.
Aside from that, diners are given a choice of sauces to mix and match. They could go for the sweet, sweet and spicy, and the spiciest one. The staff would suggest you try the mild sauce first so that you get to appreciate the flavors and not burn your tongue.

Browsing through the menu, one would be able to see a lot of ala carte dishes that are perfect for beer matches and can even be a meal unto itself. Since this is a Thai restaurant, a couple of their best sellers would be the PAD THAI and the POMELO SALAD. The Pad Thai is a crowd favorite. The nuts add a different texture to the noodle. It has a sweet taste that they might want to tone down though. The POMELO SALAD hands down is amazing. The ripeness of the the fruit coupled with the coconut milk makes it a joy to eat. The play on the flavor and texture is perfect.
Another dish that came highly recommended was the PANDAN CHICKEN. The fillet was wrapped in pandan leaves. They are then deep fried to create a moist and tender dish.
Dining with a few friends could give you a bit of advantage in terms of being able to try a lot. You might want to get a platter for the hotpot and bbq. Then, partner it with a couple of ala carte dishes.
SIAM THAI in KAPITOLYO is a perfect place to visit during sports event as you get to drink, eat and enjoy an amazing game.
